HTH lecturers win cooking challenge

On April 13, Mr de Vos and Mr Elsenburg won a competition organised by Vishandel Jan van As. 25 companies competed to find creative recipes with Nordic (Icelandic) salmon as the main ingredient.

Our HTH chefs fermented the salmon in yoghurt liquid, full of lactic acids, and served it in three ways: As an amuse bouche, as a fine dining starter and as a starter for a brasserie.
